La Storia
In Sicilia, tra fine inverno e primavera, le campagne si riempiono di asparagi selvatici. Da piccolo andavo a raccoglierli con mio nonno lui li vedeva da lontanissimo e tornava sempre con mazzi enormi, io cercavo ancora. Una specie di gara silenziosa, nei campi. Quel ricordo sa di aria fresca, di terra secca e di questa pasta semplice che si faceva dopo.
The Story
In Sicily, between late winter and spring, the countryside fills with wild asparagus. When I was a child, I used to go picking them with my grandfather he could spot them from very far away and would always come back with huge bundles, while I was still searching. It was a kind of silent competition in the fields. That memory tastes like fresh air, dry earth, and this simple pasta that we would make afterwards.
La Ricetta / The Recipe
- Pasta (spaghetti o linguine)
- asparagi selvatici (parte tenera)
- Olio extravergine d'oliva (ovviamente abbondante)
- Aglio q.b.
- Peperoncino
- Un goccio di vino bianco
- Pasta (spaghetti or linguine)
- Wild asparagus (tender parts)
- Extra virgin olive oil (generously, of course)
- Garlic, to taste
- Chili pepper
- A splash of white wine
- Spezza ogni gambo di asparago con le dita finché cede da solo la parte tenera viene con te, quella legnosa rimane indietro.
- In una padella, scalda l'olio con l'aglio e il peperoncino a fuoco basso. Aggiungi gli asparagi, fai saltare qualche minuto, poi sfuma con il vino bianco.
- Cuoci la pasta e scolala 2 minuti prima. Trasferiscila in padella con un mestolo di acqua di cottura e manteca fino a cremina.
- Break each asparagus stalk with your fingers until it naturally snaps—the tender part comes with you, while the woody part stays behind.
- In a pan, heat the olive oil with the garlic and chili pepper over low heat. Add the asparagus and sauté for a few minutes, then deglaze with the white wine.
- Cook the pasta and drain it 2 minutes before it's done. Transfer it to the pan with a ladle of cooking water and toss until it becomes creamy.
